For the spelt porridge with oranges and whipped cream, bring water to a boil with a pinch of salt and the spelt flakes, simmer gently for about 5 minutes, stirring repeatedly.
Grate the oranges, saving the zest. Squeeze one orange, peel one and cut into pieces. Add orange juice, honey and cardamom to the porridge and stir in well, whip cream with some orange zest until stiff.
Divide the spelt porridge with oranges and whipped cream on two plates and serve.
