For the bread dumplings, cook the oatmeal with a little water until soft. Cut the bread into cubes. Heat the milk and water to lukewarm and pour over the bread cubes.

Add salt, herb salt, pepper and ground parsley to the bread cubes. Allow to soak until everything is soft. Chop onions, garlic and bacon and sauté in lard until translucent.

Let cool slightly and mix into the bread mixture with the eggs, chopped herbs and cooked oatmeal. Mix well, then let rest a bit.

In the meantime, boil salted water in a large pot. Form small dumplings and let them steep in the gently bubbling salted water for about 10-15 minutes (depending on size) until they float to the surface.

It goes very well with a warm leek sauce and green salad.
