Roast the chopped nuts in a frying pan without fat and cool a little. Beat the egg, honey and milk until creamy and stir in the nuts. Cut the bread roll into slices and soak in the egg mixture.
Beat the egg yolks with the sugar until creamy, then put on a water bath, add the apple juice and beat until fluffy.
Heat some oil and butter in a frying pan and fry the soaked, bread slices in it until golden brown.
Peel and dice the apple and mix into the sauce. Arrange the Poor Knights and add the sauce.
