For the stuffed dates in prosciutto coat, preheat the oven to 180°. Cut the blue cheese into 16 evenly sized pieces. Fill the dates with one piece of cheese each and wrap each well with a slice of prosciutto. Place the date packets on baking paper on a baking sheet and roast on the middle rack for about 10 minutes. Then turn off the heat, flip once, and let sit with the oven door slightly open for another 2-3 minutes. The ham should be lightly browned but the stuffed dates wrapped in prosciutto should not get too crispy.
