Instructions:

1. melt the sugar in a saucepan at low temperature. Add the spices, extinguish with wine and bring to a boil. Stir the cornstarch with a little water and add to the sauce once the sugar is completely dissolved. Cook a little more, season with salt and pepper and remove from the heat.

2. cut the young onion into fine rings – also the green leek. Peel the papaya, cut in half and scrape out the seeds with a spoon. Cut the flesh into coarse cubes and warm briefly in the sauce together with the green onion.

The sweet and savory papaya ragout tastes delicious with fried shrimp, redfish or possibly scallops, but also with veal fillet.
