For the spaghetti in zucchini tomato sauce, cook the spaghetti in plenty of salted water until al dente, strain, save some pasta water, rinse and put in a pot.

Wash and finely chop the tomatoes. Wash zucchini as well and cut or chop finely. Chop onion and garlic as well.

Heat some olive oil in a pan and sauté onion and garlic in it, add tomatoes and zucchini and simmer on low heat for about 5 minutes.

Add pasta water and strained tomatoes, season with spices and herbs. Add pasta to the sauce, let it simmer for a short time and serve hot.
