For the chestnut soup, heat oil or butter in a pot, sauté soup seasoning vegetables and chestnuts.

When it starts to smell good, add water and cook covered for about 10 minutes. Then puree with a hand blender.

Season to taste with salt and pepper. Serve the chestnut soup with a blob of sour cream in each.
