Wash the whole pumpkin. Cut off one lid and set aside. Remove seeds, spongy interior along with a little pulp. Slice toast or white bread, toast on both sides, then cut into cubes. Finish hollowed pumpkin alternately with a layer of bread cubes, grated cheese and a few tablespoons of crème frâiche. Put the lid and wrap the pumpkin in aluminum foil.Bake pumpkin on the lowest rack of the oven preheated to 175°C for about 2 hours.To serve: Remove foil and lid. Carefully scoop off pumpkin flesh and mix with bread-cheese mixture. Divide among preheated plates, grind over with plenty of pepper from the mill.
