For the tofu cordon bleu with olive paste in pumpkin breading, cut tofu slices in half, pepper and salt.
Mix olive paste with breadcrumbs until smooth.
Coat one side of the tofu rather thickly with olive paste, place the other half on top and press down a bit.
Grate pumpkin coarsely and cheese finely and season with flour, nutmeg, cumin and salt.
Now mix whole wheat and soy flour with water to make a thick paste and coat one side of the assembled tofu slices with it.
Dip in the prepared pumpkin breading and place in a pan heated with a little oil.
