Place peaches briefly in a pot of boiling water, remove and peel the skin from the peaches.
Allow to cool slightly, then remove the pits from the peaches and cut into wedges. To do this, it is best to first cut the peaches down to the pit, this will make it easier to get the pit out.
Put the peach slices into a smaller pot, add water and sugar, bring to a boil and simmer for a few minutes. Season to taste.
Fill the peach compote into glasses.
