For the potato croquettes, first remove the peel from the potatoes and boil, mash. Melt the butter and add it. Add the spices and the egg yolks, mix well.

When cold, form small rolls, 3 cm thick and 7 cm long.

Turn them in beaten egg whites and then in breadcrumbs and bake the potato croquettes floating in fat.
