The yogurt is mixed with the very finely grated garlic cloves, the weighted parsley (or mint) and the pinch of salt and folded into the cucumbers.

This leaf salad is exceptionally popular with stuffed vine leaves, shishkabaeb or kufta.

(*) The best cucumbers are the firm, dark green ones, medium in size, i.e. about 7 to 10 cm long and 2 to 3 cm in diameter.

If you need to use larger cucumbers, sprinkle a little salt on the cut or grated cucumbers and drain them in a sieve. Squeeze well before use.
