For the Finnish cake – Kermakakku – first cream the butter with the sugar and gradually add an egg. Mix well the cinnamon, baking soda, cardamom and flour.
Fold half of this mixture into the butter/sugar/egg amount. Stir in the bourbon vanilla sugar and cream as well then fold in the rest of the flour mixture.
Pour the batter into a greased, or sprayed with baking spray, bundt pan and bake for at least 50-60 minutes at 180 degrees. Remove the finished kermakakku from the oven and let cool.
