At the beginning beat the snow.

Also beat the yolks, powdered sugar and vanilla sugar until fluffy. Then add the cream and mix again briefly.

Now add a small shot of rum to the mixture and then mix in the whole spelt flour. Finally, fold in the snow.

Pour the mixture into a greased and floured baking pan, spread the halved and pitted apricots on top and decorate with marzipan (in the pit).

Bake the cake at approx. 170 °C for 40-45 minutes.
