Info: On Ash Wednesday, it is customary to eat stockfish or herring in Friuli. The herring are not only salted, as with us, but also lightly smoked. This gives it not only a smoky flavor but also a firm consistency.

Cut the herring into centimeter-sized cubes. Sprinkle with the juice of a lemon to prevent the apple cubes from discoloring. Clean the carrot and fennel, cut into matchstick-fine strips on a vegetable slicer.

Mix everything carefully, add pepper, fennel seeds, salt and very little olive oil.
