For the sweet ribbon noodles with pear and plum compote, peel the pears, quarter them, remove the core and cut into cubes.

Wash the plums, cut them in half, remove the seeds and cut them again.

Bring pear juice, lime juice and star anise to a boil and steam plums and pears in it until firm to the bite.

Remove the fruit from the juice and boil it again with the cornstarch. Return the fruit to the sauce and allow to cool.

Boil milk and equal amounts of water with honey, vanilla sugar and a pinch of salt and cook the ribbon noodles in it until al dente. Stir frequently!

Roast the coconut flakes in a pan without fat until they are fragrant.

Strain the ribbon noodles, distribute on plates and arrange with the compote.

Serve the sweet ribbon noodles with pear and plum compote sprinkled with the toasted coconut flakes.
