Put the water, salt and crushed garlic cloves together with the sage leaves and olive oil in a bowl and simmer on low heat for 30 minutes, then strain.

The whisked yolks in a soup bowl form and stir in the gravy little by little. Place a few thin slices of toasted bread in each plate, add the clear soup and serve hot on the spot.
