Instructions:

For the chicken from the wok, first prepare the peanut sauce. Mix together the peanut butter, fish sauce, lime juice and crème fraîche.

Peel and grate the ginger. Peel and mince the garlic cloves. Mix the ginger, garlic, acacia honey, soy sauce, sweet chili sauce, apple cider vinegar, olive oil, salt and pepp er to make a marinade.

Shred the chicken, toss in the marinade and let sit. Thinly slice the chili and peel the onions. Chop the onions, cabbage and peppers into small pieces.

Heat a wok and fry the vegetables in olive oil just briefly to keep them crisp. Add chicken and marinade and heat through. Sprinkle the chicken from the wok with chopped cilantro and serve with noodles or rice, lime wedges, soy sauce and peanut sauce.
