For the potato salad with core oil, cut cooked potatoes into slices as thin as possible and place them in the lukewarm soup immediately after cutting. Fold in the finely chopped onion, vinegar, seed oil, salt and pepper and stir the salad until it has largely absorbed the liquid and is nice and creamy.

Chill the potato salad with core oil and let it stand until serving time. Before that, garnish with finely chopped chives or watercress.
