For the ginger-peanut sauce, chop the peanuts and the peeled ginger bulb.

Homogenize in a blender together with the coconut milk, red curry paste, lime juice, sweetener (add according to taste) and soy sauce.

For an even spicier taste, you can also chop a chili pepper and mix it into the ginger-peanut sauce.
