In Belarus, these delicious potato pancakes are eaten plain or with smetssna, sour whipped cream, or with sautéed onions and thin slices of bacon. They are also served as an accompaniment to meat dishes.

Rinse the potatoes, peel them and grate them as finely as possible with a juicer, or even better by hand. Squeeze lightly. Immediately mix with the peeled and finely chopped onions, the eggs and salt. In a large, shallow, heavy skillet, heat the oil over medium heat. Using a large spoon, place potato pancakes in the oil and bake 3-4 on each side until golden brown. Drain briefly on paper towels and serve while still hot.

Our tip: Use a bacon with a strong flavor – this will give this dish a special touch!
