For the baked fruit salad with shot, first prepare the fruit. To do this, wash and core the peach and apple and cut into cubes. Peel the pineapple, remove the stalk and cut into cubes, also remove the peel from the banana and cut into slices. Wash the grapes and raspberries, cut the orange and lemon in half and squeeze. Cut the vanilla bean lengthwise and scrape out the pulp.
Mix the egg yolks with honey, vanilla pulp, rum, orange liqueur and orange and lemon juice. Beat the egg whites until firm and fold into the egg yolk mixture. Pour the cut fruit into small ovenproof dishes, cover with the snow mixture and bake in the oven at 180 degrees (convection oven) for about 10 minutes.
Allow the baked fruit salad with shot to cool briefly and serve.
