Cut cheese into 2 cm cubes. Cut the apple and figs into pieces as large as possible on the spot. Also cut the pita bread into cubes and dip in olive oil. Skewer the figs and Manchego and the Gouda and apple together, evenly distributing the bread cubes in between.

Mix white wine, flour, 2 tbsp olive oil and eggs to make a batter.

Pull the skewers through the batter and deep-fry them in hot frying fat.

Cut chicory in half lengthwise and remove bitter stem. Sauté chicory halves in olive oil on all sides. Sprinkle with sugar and caramelize briefly. Stir in grape halves, toss briefly, and season vigorously with salt and freshly ground pepper.

Serve the chicory with the cheese skewers.
