For the crispy apricots on skewers, first cut the apricots in half, remove the pit and place the apricots with the cut side facing up. Drizzle with a little apricot brandy.
Season the ricotta with finely chopped thyme, salt and pepper, but do not salt it too much. Pour some into each of the hollowed out apricots and reassemble the apricots. Wrap each apricot in raw ham or bacon and put on four small skewers.
Heat some vegetable oil in a frying pan and slowly fry the skewers over a low heat until crispy on all sides.
The crispy apricots on skewers go well with rice refined with almonds, raisins and cloves or crusty white bread.
