Cut the cleaned vegetables diagonally into slices about 3 mm thick and salt lightly. For the dough, sift both types of flour with sugar and salt. Set aside about a third and turn the vegetable slices in it. Mix well the ice-cold water with the egg yolks and stir in the remaining flour in two batches. At first, stir the mixture until it is rather smooth and then stir it loosely with a fork (never with a whisk!) so that the dough has a rather lumpy consistency. Heat oil in a deep pan. Pull the floured vegetables through the batter and place them in the hot oil. Bake until golden on both sides. Lift out and drain on paper towels. Arrange and serve with the prepared sauce. For the sauce, mix the soy sauce with water, maple syrup, ginger and young onion cubes.
