For the spelt-carrot salad, soak the spelt grains for one night and then boil them for about 20 min. until soft. In the meantime, wash the carrots, cut into slices and steam for about 10 min.
Cut apples into small cubes and sprinkle with lemon juice. Mix with the spelt and carrots.
