For the avocado cakes, peel the avocado and remove the pit. Separate the eggs and beat the whites in a bowl with a little salt until very stiff. Mix the egg yolks and sugar with the avocado until a homogeneous mass is formed.
Then fold into the beaten egg whites. Now divide the mixture and in one half stir in the plain cream without beating too much air out of the dough. Preheat the oven to 180 °C.
Grease the ramekins and pour the batter into them. Bake for 20-30 minutes, depending on the size of the molds.
