Turkey: Kuenefe with Sheep Cheese

*Tel Kadayif: These are the dough threads that you can buy in any Turkish supermarket.

Put sugar and water in a saucepan, boil, make 5 min, add zirton juice, make again briefly and remove from the stove. Crush or grate the feta cheese. Melt butter in a tray with 30 centimeters sides. Add the kadayif.

Grate the kadayif with your hands to separate them from each other and so that the butter penetrates the kadayif. Set half aside. Spread the other half evenly in the tray with your hands pressing heartily. Add feta cheese on top, spreading half of the kadayif evenly on top of the feta cheese in the same manner as before.

Bake in the heated oven at medium heat for about 30 minutes until golden brown.

Stand for 1-2 min. after removing from oven. Pour syrup over them. Close the lid and wait for the syrup to be absorbed by the kadayif. Cut into pieces and bring to the table.

Remarks:

In some regions, the tray is spread with butter-grape must mixture and kadayif is put on it.
