For the honey and feta cheese puff pastry, wash and dry the mint and chop the leaves. Separate the eggs.

Mix the feta cheese, one egg yolk, the honey and the mint.

Layer the puff pastry and roll out a pastry sheet of about 32 x 40 cm. Cut out squares of about 8 x 8 cm with a pastry wheel.

Beat the egg whites with a fork.

Spread the cheese mixture evenly over the squares and brush the edges with the beaten egg white.

Fold the squares into triangles and glue the edges well with your fingers to prevent them from rising.

Spread a tray with baking paper and place the triangles, but not too close together, so that they have enough space when they rise.

Brush the puff pastry pieces with the milk and sprinkle with shredded coconut. Bake the honey and feta cheese puff pastry in a preheated oven at 200 degrees for about 12-15 minutes.
