Cook quinoa according to package directions.

In the meantime, dice bell bell pepper, zucchini and carrots. Chop parsley into small pieces.

Strain cooked quinoa and place in a bowl. Mix in the finely chopped vegetables. Season with parsley, salt, lemon juice and olive oil.

Mix everything well and serve.
