For the crumbly yeast dough, crumble the butter with the flour and mix with sugar, risen yeast, salt, milk and 2 yolks to form a dough. Knead the dough well and let it rest covered on a board.

After about 15 minutes, the dough can be further processed either into croissants or into a strudel.
