Liver with Sage

Heat the butter and oil in the frying pan. When the butter foams but is not brown, pour in the sage leaves and steep for a few min.

Rub the liver slices dry with paper towels and toast in the sage butter for 1 to 2 min. per side. Arrange the liver slices on warmed plates, sprinkle with salt and pepper and top with the sage leaves.
