A great cake recipe for any occasion:

(*) for a cake springform pan of 24 cm ø Tastes the better, the longer it has been allowed to infuse. It is a stunning Christmas cake.

Knead a short pastry from the ingredients listed. Put it in a plastic bag and let it cool for half an hour.

For the filling, melt the sugar in a non-stick frying pan. Once it has turned golden, fold in the roughly chopped nuts. When they are well combined with the sugar, pour the whipped cream and add the honey. Stir on mild fire until intimately combined.

Divide the dough into two portions and roll out one half – preferably on a piece of cling film. With its help, the dough sheet can be easily transported into the mold. Line the mold – it should be exactly buttered – with the dough sheet, pulling up the edge nicely. Be careful not to tear a hole anywhere. Pour in the prepared filling and smooth it down.

Fold the top edge of the pastry over the filling. Brush this seam with egg white.

Roll out a second pastry sheet with the remaining pastry. Cut out a lid that fits exactly on the mold. Press well together all around with the hem of the edge, where the egg white will act as glue and bind the two pieces together side by side.
