Wash potatoes and boil with skin until soft. Allow to steam, peel and mash coarsely with a fork. Let cool completely. Peel garlic and chop very finely. Cut olives into fine wedges. Wash parsley and dry with a paper towel, pluck off leaves and chop finely as well. Stir garlic, olives, parsley, lemon juice, 6 tablespoons water and oil into the mashed potatoes. Season to taste with salt and pepper.
