Beat eggs, slowly add vanilla sugar and oil until mixture is nice and fluffy.

Put flour, nuts, sugar and remaining dry ingredients in a bowl. Wash and slice carrots and zucchini well. Add to egg mixture, stir briefly and add to dry ingredients.

Pour the batter into muffin tins and bake the muffins at 160 °C hot air for about 20 minutes.
