For the sponge cake batter of the Tiramisu slice, separate the eggs and beat the egg whites until stiff. Slowly add the sugar to the egg whites and add the egg yolks one by one.

Sift the flour, cornstarch and baking powder into the mixture and fold in gently.

Pour into a square sheet cake springform pan lined with baking paper, smooth out and bake at 170 degrees (top and bottom heat) for 25 to 30 minutes.

For the vanilla cream of the Tiramisu slice, boil the milk with the sugar. Cut the vanilla pod in half lengthwise and scrape out the pulp and add to the pot.

Dissolve the cornstarch in a little cold water and add to the slightly boiling milk, stirring constantly.

Simmer for another 2 to 3 minutes, stirring constantly. Remove the milk from the heat, whisk the egg yolk with a little milk and stir into the milk. When the vanilla cream is cold, fold in the mascarpone.

Spread a layer of vanilla cream on the cold sponge cake, soak the cookies in a coffee and rum mixture and spread on the vanilla cream. Repeat the process. The last layer should be a layer of vanilla cream. Sprinkle with cocoa powder. Chill for several hours.
