Spicy Apple and Onion Tart

For the savory apple and onion tart, first heat the milk. Crumble the yeast and let it melt. Mix flour, butter, 1 egg and approx. 1/2 tsp. salt. Add yeast-milk mixture and knead until smooth. Cover and let rise in a warm place for about 40 minutes.

Remove the skin from the onion and cut into fine rings. Wash young onions, cut into rings. Peel carrots and grate coarsely. Rinse thyme and pluck. Chop nuts.

Heat oil. Sauté onion until translucent. Remove a few rings and set aside. Add young onions, carrots and thyme and sauté. Stir in nuts and season the mixture with salt and pepper.

Knead dough again and roll out round (about 32 cm) on a little flour. Place in a greased tart or cake springform pan (approx. 26 cm ø), pressing up 2-3 cm at the edge. Cover and let rise for another 15 minutes.

Wash apple, remove core and cut into thin rings or wedges. Mix 4 eggs and sour cream and season. Grate Gouda cheese.

Spread onion mixture evenly on dough. Place apple on top like a roof tile. Pour sour cream mixture over top and sprinkle with grated cheese. Place onion rings set aside on top. Bake the savory apple and onion tart in a heated oven at 200 °C (convection oven: 175 °C, gas: level 3) for 45-50 minutes.
