For the Arabic parsley salad, wash the parsley, dab with kitchen roll and cut into small pieces.

Wash the tomatoes, peppers and cucumbers and cut them into very small cubes, as well as the shallots and the chili bell pepper.

Mix a marinade with lemon juice and oil, as well as salt and pepper and season with the coriander spice and the finely chopped chili pepper.

Then pour the dressing over the tomatoes, peppers and cucumbers and mix. Fold in the parsley just before serving or it will break down too much.

Arabic parsley salad goes well with almost all Arabic meat dishes, lamb, chicken and grilled meats.
