For the pancakes with mulled wine plums and gingerbread, first mix the eggs with the milk, add the sifted flour and bake thin pancakes from the dough in a little butter.
Put the spices for the filling into a spice bag. Cut the plums in half and remove the seeds. Bring to the boil once with the wine, sugar and spices. Simmer over low heat until almost all the liquid has evaporated.
Grind the gingerbread into fine crumbs using a food processor.
Spread the plums on the pancakes, roll them up, arrange on a plate and sprinkle with the crumbs. Serve the pancakes with mulled wine plums and gingerbread immediately.
