1. cut the head of the smelts. Gut the smelts, removing the pelvic fins. Rinse smelts under cold running water and drain well in colander. Season smelts with salt, turn in flour to the other side, tap off excess flour. Cut bacon into small cubes.
Heat 50 ml oil in 2 frying pans. Add smelts in 4 portions side by side, roast 3-4 min, turn to other side, mold half mass of bacon in each frying pan. Roast smelts for 3-4 min. until golden brown, remove and drain on kitchen roll.
Our tip: use a deliciously spicy bacon for a delicious touch!
