A simple but delicious cake recipe:
(*) 26 cm ø tray For the dough, put flour and salt in a large enough bowl. Add the butter and rub with your fingers until you get a crumbly mixture. Add the water and quickly bring together to form a dough.
Do not knead. Chill.
Roll out the dough to a thickness of two mm and line a baking tray with it. Leave one cm of the edge of the dough. Prick the bottom of the dough with a fork.
For the flour grate, rub butter, flour and sugar together, spread evenly on the dough base.
Meanwhile, bake the cake in the oven heated to 180 degrees on the second rack from the bottom for thirty-five minutes.
Drizzle the syrup over the cake.
Flour grate was also baked by itself. The forest workers took it broken into pieces as a high-calorie provision in their trouser sacks. Melted butter with flour and sugar can be found in the Pays-d’Enhaut as fricasson.
