*6-8 people 1. bähen pine nuts, remove. Rinse tomatoes, cut in half. Drain mozzarella. Halve large balls and cut into 24 thick slices. Rinse basil and pluck off leaves.
Place 1 mozzarella slice and 1 basil leaf between each of 2 tomato halves on HoIz skewers and stack on a platter. Finally, scatter the mozzarella mini balls around them.
Stir through vinegar, pesto, 2 tbsp water, a little salt and pepper. Whisk in the oil. Spread pesto marinade evenly over skewers and sprinkle with pine nuts. Garnish with remaining basil. Serve with fresh ciabatta. Drink: cool white wine, e.g. Pinot Grigio.
