Cook the potatoes in their skins in salted water, drain, rinse and leave to cool for a while.

Remove the pork rind from the bacon and finely dice it. Peel the onion and cut it into strips. Peel the potatoes and cut them into slices.

Heat half of the clarified butter in a large frying pan and fry the bacon cubes until translucent. Now evenly distribute the potato slices on top, season with salt and pepper and form the onion strips on top. roast everything together at medium temperature for about 10 min, then at a higher temperature until crispy golden brown. Pour the rest of the clarified butter on the potatoes, let it melt and turn everything over to the other side with a spatula. Season with salt and pepper. Roast the other side of the potatoes for 7 minutes, first at a moderate, then at a higher temperature until golden brown and crispy. Before serving, carefully shake the roasted potatoes in the roasting pan and arrange on serving plates with two Bismarck herring fillets on each side.

Serve with a well chilled light beer.
