A great fish recipe to make yourself:
Gut, strip and clean the eel. Carefully debone and lay apart, belly side down, on a countertop. Sprinkle vigorously all over with juice of one lemon. Cut into slanted narrow slices. Place eel slices in boiling, salted water. Cook for 10 minutes. Put portions on hot plates. Pour hollandaise sauce mixed with chopped parsley.
Serve: Parisian potatoes and cucumber salad. Or just offer toast with it.
