For the herb spaetzle, bring lightly salted water to a boil in a large wide pot. Place flour in a bowl. Add eggs, olive oil, a little salt, pepper and nutmeg.

Wash and chop the herbs and add them to the dough as well. Add water and mix to form a thick dough. Empty the dough onto the spaetzle strainer and press through.

The spaetzle are done when they float to the top. Strain and rinse with cold water.
