For the zucchini noodles, cook the noodles al dente according to package directions. Wash and dice the zucchini. Heat coconut oil in a pan, sauté zucchini for about 5 minutes and reduce heat.
Add milk, sugar cheese and soup seasoning. Stirring constantly, allow the sauce to thicken slightly. Stir in thyme.
Add cooked pasta, mix well and serve.
