For the chestnut flour waffles with apples, wash the apples, quarter them, cut out the core and cut the quarters into wedges. Sauté in a hot pan with the coarsely chopped walnut kernels in the butter for 2-3 minutes. Sprinkle with the powdered sugar and allow to caramelize slightly. Deglaze with the Calvados and remove from the heat.

For the waffles, beat the eggs with the sugar until creamy. Mix the chestnut flour with the starch and baking powder. Mix the curd with the milk and butter until smooth. Stir into the egg cream alternately with the flour mixture.

Brush the hot waffle iron with butter and gradually bake the waffles in it. Serve the chestnut flour waffles drizzled with apples and maple syrup.
