For the herb waffles, first beat the butter until fluffy. Separate the eggs. Add the egg yolks to the butter and mix well. Mix the flour with the baking powder and stir into the butter-egg mixture alternately with mineral water and cognac.

Peel and finely dice the onion. Wash the herbs, dry carefully, chop finely and add to the batter. Beat the egg whites until stiff, fold them carefully into the batter and season everything with the spices mentioned above.

Preheat the waffle iron and grease it if necessary. Pour in a ladle of batter and bake until the herb waffles are golden brown. Do the same with the remaining batter.
