For the sweet pita, mix the oil and sugar in a baking bowl until the sugar is dissolved and the oil has turned a whitish color.
Add orange juice and some zest and juice of a lemon, cognac, cinnamon and cloves. Mix well for a few minutes.
Mix baking soda with flour and add slowly until the dough has formed a homogeneous mass.
Wash raisins, rub dry, dust with 1 tablespoon flour and stir into the dough.
Line a cake springform pan with parchment paper up to the top edge and sprinkle with flour.
Preheat the oven to 200° C.
Pour the batter into the pan and bake the sweet pita for about 45 minutes.
