A simple but delicious cake recipe:

(*) For a rectangular tray, bottom covered with parchment paper, edges greased. Roll out the dough to a rectangle of about 30x33cm.

Mix flour, salt and sugar in a baking bowl. Rub butter with flour until evenly crumbly. Add egg and water, quickly combine to form a soft dough, do not knead. Flatten the dough, put it to cool for about thirty minutes with the lid closed.

Shape: roll out about 4/5 of the dough on a little flour into a rectangle. Place as a base (without edge) in the prepared baking tray, prick tightly with a fork, set aside to cool for about thirty minutes.

Roll out the rest of the dough on a little flour to a rectangle of about 15x40cm, then cut lengthwise into strips about 1 1/2cm wide, place on parchment paper to cool.

Filling: spread jam evenly on the dough base, spread apples evenly on top.

Stir yolks, water and sugar until light in color. Add vanilla sugar and all ingredients up to and including butter, mix in.

Beat the egg whites with the salt until stiff. Mix flour and baking powder, layer with the snow on the quantity form, pull with the rubber scraper just under it.

On the apples form, spread smoothly. Place the cooled strips of dough in a grid pattern on top of the filling, cut straight along the edge.

Mix well powdered sugar and juice of one lemon, for the glaze with the lid closed.
